This special Manchego cheese is aged for 12 months, giving it a sharper, nuttier flavour and a firmer, more brittle texture than it's younger namesake. It is produced in Central Spain's La Mancha region, a territory known for its fierce winds, violent temperature swings and desert-like aridity. This Manchego is made using traditional methods under strict quality guidelines. Our dairy can look back to three generations of passionate cheesemakers and it is one of the most awarded dairies in La Mancha, both nationally and internationally, and specialized in producing only sheep milk cheeses. Enjoy our Manchego cheese the way Spaniards do, serve Manchego cheese before the meal topped with a spot of Membrillo, dipped in honey, or with our beautiful marmalades from La Catedral de Navarra available also in our on-line shop . It is perfect with crusty bread, and with salads dressed with Extra Virgin Olive Oil. Manchego cheese can be served with red wine such as Tempranillo or Rioja. And the aromatic intensity of a Manzanilla or Fino Sherry from Jerez makes it an excellent foil for Manchego.
