HISTORY AND TRADITION

The history of La Catedral de Navarra dates back to the first half of the last century. During the Civil War, soldiers´ mothers preserved vegetables, casseroles and pâtés for their sons and daughters, and after the war it was also essential to store as much seasonal food as possible so that they were available all year round, Preserves became both necessary and a part of daily life, above all in regions such as the Navarre riverbanks, where the fertile region produced such exquisite products that they were well worth storing. Petra Lopez, grandmother of the current owner of La Catedral de Navarra, started up a small jar sealing business in Mendavia, combining her knowledge of the fields with a strong enterprising nature. She and her family used tin to seal jars that contained both their own vegetable preserves and those prepared by the villagers in their homes. By the mid-40s of the last century they were already selling artichokes, tomatoes, peppers, white asparagus, and leeks. Since then, all the family’s efforts have been aimed at obtaining the best vegetables and preserving their flavor intact, which has converted La Catedral de Navarra into a synonym of quality.

 

 

 

ASPARAGUS FROM NAVARRA

White, fiber-free and with the characteristic bitter taste of this Denomination of asparagus. Always harvested near our facilities at night and scalded before peeling so that the skin protects the properties and aromas. Highly recommended for weight loss diets.

 

ARTICHOKE HEARTS

Blanca de Navarra variety; rounded with short leaves. The products are elaborated and preserved immediately on arrival from the field, and each step of the process is intended to safeguard their full authentic flavor. Harvested in April-May.

 

LEEKS

These are grown near our facilities in Winter when the cold converts them into a fine and sweet delicacy. Naturally preserved so that they arrive at the table as if they were freshly cooked.

 

BOLETUS EDULIS

Always prepared fresh and with quality olive oil. Wild mushrooms selected from the most fertile areas in Spain for their growth.

 

Fried Green Peppers

Cornicabra variety green pepper in sunflower oil.

 

 

Marmalades & Sauces

LC HOT SAUCE "ALEGRIAS RIOJANAS

Spicy sauce made from chilli peppers "alegrías riojanas".  Made naturally, without preservatives or stabilizers, using only chilli peppers "alegrías riojanas", olive oil, onion and salt. The chili peppers are prepared in the Sainz family's traditional methods.

 

Vizcaina Sauce – a Tomato Pepper sauce …A traditional sauce of the Basque Country eaten with fish (cod or hake), or with snails.
With pork, one of the most mentioned dishes is "Pork with Biscayne sauce", and is also served with snout, tripe, and tongue are very famous.
We like it spread on toast with a thin slice of ham!
This sauce provides a powerful, but at the same time pleasant, spicy bite.
Perfect for "tapas" and entrees, or as a condiment for kitchen use.

 

LC Marmalades: tomato with basil marmalade, white asparagus marmalade, piquillo pepper with licorice marmalade. All perfect to accompany charcuterie board and more.

 

 

 

 

 

PIQUILLO PEPPERS

Harvested by hand, fire- roasted, hand peeled and packed, small, red sweet piquillo peppers. They are preserved dry so as not to dilute the intensity of the pepper recently removed from the fire. Harvest: Sep-November.

 

BABY BEANS

Hand-picking the most tender and refined beans, they are then preserved in a smooth, quality olive oil so as not to drown their exquisite taste.
La Catedral de Navarra uses only the best quality olive oils from Spain for their preserves.

 

TOMATOES

Choosing only the fruit with the best balance of acidity and sugar content. La Catedral de Navarra tomato has a red consistent flesh and an exquisite taste. Harvest: August

 

OYSTER MUSHROOMS (PLEUROTUS OSTREATUS)

La Catedral de Navarra mushrooms are hand collected in Winter with a maximum cap size of 6 cm.

 

WILD EDULIS BOLETUS MUSHROOMS IN OLIVE OIL

La Catedral de Navarra hand picks the wild Boletus Edulis mushrooms from the most fertile areas in Spain for their quality, and growth size, then prepares them fresh adding high quality olive oil.

 

BASQUE PIPARRA - CHILI PEPPERS - The piparras or chili peppers are pickled whole in the Sainz family's traditional methods.
